A premium agave spirit made from the knowledge gained by hundreds of years of tradition through blood, sweat and long days by hard working men and women in the Sonoran sun. Cabullona is, as all agave drinks are, a type of mezcal. Cabullona is made from a few specific types of agave, each chosen for their individual characteristics, blended to make ypur taste buds aroused. While i cannot give the exact recipe because each mezcalero (distill master) has their own recipe to create a blended master piece called Cabullona. Listed are the main types of agave used and why they were chosen to be used to make Cabullona.
Agave Angustifolia (Espadin): Was chosen for its natural honey/sweet potato flavors with notes of roasted agave piña taste.
Agave Americana (Arroqueño): Was chosen for its layered herbs and spices from its earthy tones.
Pacifica (Yaquina): Was chosen for its dry, peppery and also fruity spirit
Wild Agave: This agave grows on its own usually in hard to reach areas. these are harvested much later in their growing cycle and can be 25 years old. As a result they tend to be more complex in flavor an aroma with more spicy notes.
Tobala Agave: Normally grows wild in high altitudes and is relatively minuscule in size but when blended with other agave it really adds a honey earth flavor. While hard to find its woth the time and energy.
